Manual fine work, which has remained unchanged for hundreds of years, is how coarse sea salt is obtained.

It crystallizes on the surface of special pools called salinas, where ocean water is driven and enclosed. The water slowly evaporates under the influence of the sun and wind, and salt crystals form on its surface.

The resulting crystals are collected manually, without any technical intervention, only with the help of long wooden rakes. This keeps the salt's structure consistent and the salt perfectly pure and of the highest quality.

The collection and processing of sea salt, similar to pepper in Kampot, are handled by individual small farms. Farming families pass down the tradition of sea salt production from generation to generation. The salt is therefore in absolute bio quality, without the need for any subsequent refining. And just like with pepper, we also purchase the salt directlyfrom these farmers to ensure they receive a fair reward for their hard work.

Usage

Thanks to its delicacy and structure, fleur de sel is primarily used as a final touch on a prepared dish.

Certainly it does not belong in a grinder, it's enough to lightly crush it between your fingers and apply the fragile crystals to the surface. They dissolve quickly and perfectly enhance the flavor of the dish.Moreover, if you apply fleur de sel just before serving, it creates an amazing crystalline effect on both savory and sweet dishes.
