The manual delicate work, which has remained unchanged for hundreds of years, is what the harvesting of coarse sea salt looks like.

It crystallizes on the surface of special pools called salinas, into which ocean water is driven and enclosed. The water slowly evaporates under the influence of the sun and wind, and salty crystals form on its surface.

The formed crystals are collected manually, without any technical intervention, using only long wooden rakes. This ensures the salt's structure remains consistent and the salt is perfectly pure and of the highest quality.

The collection and processing of sea salt, similar to pepper in Kampot, are managed by individual small farms. Farming families pass down the tradition of sea salt production from generation to generation. Therefore, the salt is in absolute bio-quality, without the need for any subsequent refining. And just like with pepper, we purchase the salt directlyfrom these farmers to ensure they receive proper compensation for their hard work.

Usage

Thanks to its delicacy and also its structure, fleur de sel is primarily used as the final touch for a prepared dish.
