Handcrafted fine work, which has remained unchanged for hundreds of years, is what the extraction of coarse sea salt looks like.

It crystallizes on the surface of special pools called salt pans, into which ocean water rushes and is enclosed. The water, under the influence of the sun and wind, slowly evaporates, and on its surface, salty crystals are formed.

The resulting crystals are collected by hand, without any intervention of machinery, using only long wooden rakes. As a result, the structure of the salt remains consistent and the salt is perfectly pure and of the highest quality.

The harvesting and processing of sea salt are, just like Kampot pepper, managed by individual small farms. Families of farmers pass down the tradition of sea salt production from generation to generation. The salt is therefore of complete organic quality, without any need for subsequent refining. And just like with pepper, even from these farmers, the salt we purchase directly, to ensure that for their hard work they receive a proper reward.

Usage

Thanks to its delicacy and structure, the salt flower is used primarily as the final touch to a prepared dish.

Certainly does not belong in the grinder, just lightly crush them between your fingers and sprinkle the delicate crystals on the surface. They quickly dissolve and perfectly enhance the flavor of the dish. If, moreover, you apply the salt flower just before serving, it creates on the surface of the dish a wonderfully crystalline effect both on savory and sweet dishes.
